sunday night beef, potato and carrot stew

serves 4 – 6

prep time: 30 minutes (in stages)

cook time: 2 hours

Flour to dredge beef

Olive oil for searing

1 pound of cubed beef tips

2 tablespoons butter

Salt and pepper to taste

3 celery stalks chopped

1/2 large red onion chopped

5-6 garlic gloves finely chopped

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 tablespoon flour

4 cups beef broth

2 Turkish Bay leaves

3-4 sprigs of fresh thyme

3-4 sprigs of fresh parsley

Kitchen twine

3 potatoes

6 carrots

Note – I use organic produce and products.

1. Season the beef with salt and pepper.

2. Dredge the beef in flour and set aside.

3. Heat the olive oil in a heavy bottom pot and place beef in a single layer, browning on both sides for approximately eight minutes.  Drain and place aside.  Follow this step until all the beef is browned.

4. To the same pot, add butter, sauté onions and celery until translucent.  Add garlic and stir, letting cook for about a minute.

5. Add tomato paste and stir.

6. Add Worcestershire sauce and stir.

7. Add flour and stir.

8. Add broth and using the twine, tie the sprigs of parsley and thyme, creating a little herb package and drop into the stew along with the bay leaves.  Bring to a hearty boil.  Lower heat and let stew simmer for an hour stirring occasionally.

9. Add carrots and potatoes and let simmer for another 40 – 60 minutes or until carrots and potatoes are fork tender.

10. Remove the herb package and bay leaves. Taste for seasoning and add salt as needed.

11. Serve immediately with a crusty slice of bread.

My first attempt at beef stew and I was pleasantly surprised how much my husband and kids liked it.  I sat at the table with bated breath until my husband proclaimed he loved it.  He’s a food snob with a palate for the tasty so I knew it was a hit.  I studied several recipes until i pulled together a flavor profile I thought my family would enjoy.  I hope you enjoy it too!
